Yacon is the syrup, extracted from the tuberous roots and used as a sweetening agent. It supplies very low calories, at around 20 per spoonful, along with equally low sugar levels and tastes similar to molasses or raisins.
One of the secrets of Yacon syrup, is the fact that 30% to 50% of it consists of fructooligosaccharides (FOS), a natural sweetener that isn’t broken down very easily by the human body and it’s also a great source of fiber.
